Lincoln Lakeshore is a sub-appellation of Niagara Peninsula and from here comes this rather delicious multi-vintage sparkling Chardonnay. Four years on the lees, post blending and with 2g/l dosage it shows classic notes of granny smith apple, yeast, freshly baked bread and almond. Red mullet and scallops with ponzu dressing.

Lincoln Lakeshore: A Sub-Appellation Shaped by Lake Ontario

Lincoln Lakeshore is a sub-appellation of Niagara Peninsula. Its long gentle slopes are dominated by the proximity and influence of Lake Ontario, which gives long growing season and provides numerous seasonal springs and streams. The lake effect makes this site ideal for growing whites that can fully mature on the vine over a long period, producing wines with great intensity, complexity, structure, and elegance.Trius Showcase wines are the true expression of a passion for making great wine. A Rare Sparkling Gem from Watching Tree Vineyard

A rare 100% Chardonnay sparkling wine is harvested from a single vineyard - the Watching Tree Vineyard - within the Lincoln Lakeshore sub-appellation. The base wine is a blend of three vintages, with each spending time in neutral French oak barrels (32% from 2015 vintage aged in oak for 3 years, 34% from 2016 vintage aged in oak for 2 years, and 34% from 2017 vintage aged in oak for 1 year). This méthode traditionnelle sparkling wine spent 48 months ageing sur lie in an underground sparkling wine cellar. The wine was disgorged in September 2022 and a dosage of the base wine plus 2g/l of sugar was added to preserve the varietal characteristics.

Tasting
NOTES

Intense lemon core with persistent, tiny bubbles. The nose is clean with good intensity of aromas; notes of lemon peel and granny smith apple and after aeration secondary aromas of yeast, freshly baked bread and almond. The palate is dry with an elegant, smooth mousse and crisp acidity. The fruit is slightly riper on the palate with green apple, grapefruit peel and red peach underscored with brioche and yoghurt. Lovely long finish.

Food
PAIRINGS

A dish with some oiliness from the fish to match the texture of the wine and a citrus dressing to cleanse the finish would be the best combination here. Seared red mullet and scallops with a ponzu dressing. A nice vegetarian option could be green salad with pears and candied walnuts.
