Tío Pepe En Rama is González Byass' purest expression of fino, bottled each spring from a special selection of casks chosen for their intense flor activity. The 2025 edition was drawn from 92 casks across the historic Macharnudo and Carrascal soleras. Bottled unfiltered and unclarified, the wine shows a naturally hazy appearance and heightened aromatic complexity – chalk, iodine, toasted almond, lemon zest and chamomile.
On the palate it is bone‑dry, saline and vibrant, shaped entirely by biological ageing under a thick, healthy flor encouraged by a mild winter and humid autumn. En Rama releases are produced in small quantities, inspired by how finos were historically served straight from the cask. This limited bottling captures the most vivid expression of the Tío Pepe house style, prized for its freshness, pungency, and gastronomic versatility.
