It is easy to associate steak with Argentina, but venison is also a wonderful pairing with Malbec, especially here from this high altitude, limestone plot on a 480 million-year-old seabed. Chalky minerality, fresh plum moving into concentrated blackcurrant; dried floral notes and hints of spice. Haunch of venison it is!

Pyros Vineyard Limestone Hill: Terroir at Its Finest

Pyros Vineyard Limestone Hill is made from the finest grapes from our Limestone Hill plot, whose colluvial soil is composed of rocky limestone from a 480 million-year-old seabed, along with fine materials (sand, silt, and clay).

Soil Composition

The soils are poor in organic matter but rich in minerals and distinctive for their optimal retention and distribution of water, and no compaction.

Unique Location

Limestone Hill is the only vineyard within the valley planted over the slope of Pedernal Hill. Situated at 1,400m above sea level, the vineyards were planted in 2008 with quality massal selection Malbec vines.

Tasting
NOTES

Japanese plum predominates the nose whilst the first sensation on the palate is one of chalky minerality followed by fresh plum moving into concentrated blackcurrant. Dried floral notes and hints of spice on the finish.

Food
PAIRINGS

The finely meshed tannins combined with the plum and blackcurrant flavours would suit the rich leanness of haunch of venison in a port reduction source. Naturally, barbecued red meats also work well with the tannin and acid structure of Malbec.
