Head sommelier at Kadeau, No.41 The World’s 50 Best Restaurants 2025

Originally from Bergen, Norway, Lilleheil always envisioned a career in academia and business after his university education. But somewhere along the way, he fell in love with the hospitality industry and decided to stay.

After working in various restaurants across Norway, he made the move to Koks in Greenland, the northernmost Michelin-starred restaurant in the world. Looking for a new challenge, he then joined the sommelier team at Hiša Franko (No.69 The World’s 50 Best Restaurants) in Slovenia. Back in Scandinavia in Lilleheil took on the role of head sommelier at Kadeau, where he has worked for two years.

Lilleheil believes in the importance of the sommelier’s role as a storyteller for hardworking winemakers, championing wines from small producers and lesser known regions. From Slovenia to Quebec, he focuses on winemakers that defy expectations and run their vineyards sustainably.
