Made from sauvignon blanc, chenin blanc and sémillon grown in the oldest continuously running commercial vineyard in Texas, William Chris Vineyards Boxing Rabbit Cuvée 2023 hails from the Texas High Plains AVA. With sauvignon blanc dominating the blend, expect fresh flavours of cut grass, white flowers and green apple that make it an ideal apéritif.

Boxing Rabbit is an experimental, small‑lot cuvée showcasing William Chris Vineyards' creative side. The blend varies slightly each year, showcasing the fresh, mineral character of green and black grapes grown in what is commonly regarded as the agricultural hub of Texas.

In 2023, the cuvée was fermented in stainless steel and aged partly in neutral oak, creating a bright yet textured style. William Chris focuses on sustainable, vineyard-driven practices, working closely with growers across Texas to capture regional authenticity.

Boxing Rabbit is vibrant, expressive and playful in character – an example of the innovation helping shape the identity of modern Texas wine.

NOTES

The sauvignon blanc in this Texan sparkler comes through on the nose via grassy notes, which share a glass with ripe lemon, Granny Smith apple, peach, nectarine and white flowers. The lemon is echoed on the palate, along with a delicate dairy hint and nutty notes of almond and cashew. The bubbles are fine, the acid is high, the flavours are crisp and fresh, and the finish is mineral with herbal hints. An ideal apéritif.

This sprightly Texan sparkler would work well as an apéritif, or with a Thai green papaya salad, or clams with green apple and smoked cream.
