A rosé with a difference, this small production 100% sangiovese from Emilia-Romagna is aged for a year at the bottom of the Adriatic Sea. The water's pressure, darkness and currents create an orange-pink rosé with notes of tangerine, fennel and pomegranate and a salty finish destined for a seafood risotto.

Ostrea in fundo embodies Tenuta del Paguro's underwater‑ageing concept, drawing inspiration from the Adriatic's natural rhythms. The project began when divers discovered how well submerged bottles had matured near the sunken Paguro platform. Today, Tenuta del Paguro sources grapes from select hillside vineyards, then vinifies the wine in a clean, reductive style to highlight fruit expression before sending it beneath the sea.

The 2023 vintage rests underwater for several months, developing fine-boned structure and subtle marine complexity. The constant pressure is believed to soften tannins and integrate aromatics more rapidly than on land. Ostrea in fundo reflects this balance – fresh, layered and subtly saline.

Tenuta del Paguro's approach has become a benchmark for underwater ageing, showcasing how innovation and terroir can intersect to create wines with a compelling narrative and distinctive sensory profile.

NOTES

Not your average rosé, this underwater-aged 100% sangiovese pours a dark orange-pink and is packed with inviting aromas of salted plum, wild strawberries, blood orange and red cherries. There's also fennel seed, white tea, pink grapefruit and pomegranate in the mix on the palate, which is slightly sweet. This is a complex, characterful and structured gastronomic rosé with herbal hints, racy acidity, and a long saline finish that makes it an ideal wine for food.
