Ostrea in fundo embodies Tenuta del Paguro's underwater‑ageing concept, drawing inspiration from the Adriatic's natural rhythms. The project began when divers discovered how well submerged bottles had matured near the sunken Paguro platform. Today, Tenuta del Paguro sources grapes from select hillside vineyards, then vinifies the wine in a clean, reductive style to highlight fruit expression before sending it beneath the sea.
The 2023 vintage rests underwater for several months, developing fine-boned structure and subtle marine complexity. The constant pressure is believed to soften tannins and integrate aromatics more rapidly than on land. Ostrea in fundo reflects this balance – fresh, layered and subtly saline.
