Perissos' Picpoul Blanc showcases the estate's commitment to varieties capable of retaining freshness in Texas Hill Country's warm continental climate. Picpoul has quickly become one of the region's most promising white grapes, valued for its naturally high acidity and citrus‑driven aromatics.

The 2023 release is harvested in early August and immediately destemmed and pressed preserve delicate aromatics and maintain crispness. Fermentation is carried out in stainless steel at cool temperatures, a technique aimed at capturing bright primary fruit and the grape's characteristic saline tension. A brief period on fine lees adds mid-palate weight without compromising the wine's vibrancy.

The result is a clean, energetic expression of picpoul blanc, featuring citrus blossom, lime zest, and a subtle mineral signature drawn from the area's granitic soils. Perissos continues to champion this variety as a benchmark for fresh, balanced white wine in the evolving Texas landscape.

NOTES

Given how hot it can get in Texas, this picpoul is wonderfully refreshing and lively. On the perfumed nose are notes of white flowers, lemon pith and green apple, which are echoed on the palate, along with unripe pear and stone fruit flavours. The wine has vibrant acidity, good structure, a distinct wet stone minerality, and a bitter almond backbone. Fresh and citrus-driven, it's well-balanced with great texture and a slightly spicy finish.
