Perelada's work over the past decade has centred on precision farming, including selecting micro‑plots and using canopy management to moderate Empordà's warm, tramuntana‑influenced climate. The 2023 vintage is crafted with gentle extraction to preserve aromatic purity and avoid over‑structuring the old-vine fruit. Fermentation takes place in temperature‑controlled stainless steel, followed by ageing in a combination of concrete and French oak to balance freshness with subtle textural development.
