Rotari Flavio was created in memory of the Lombard King Rotari, who assumed the honorary title of 'Flavio' to invoke the prestige of the Roman era. The chardonnay grapes that go into this rich and refreshing Risvera are grown at the foot of the Dolomites, where the grape reaches its purest expression. Pair it with roast chicken.

Cantina Rotari, based in the heart of Trentino's Piana Rotaliana, specialises in Metodo Classico sparkling wines shaped by the Dolomites' cool alpine climate. Rotari's vineyards, planted mainly to chardonnay, benefit from high‑altitude sunshine, rocky soils, and marked diurnal variation – conditions ideal for slow ripening and retention of acidity.

Rotari Flavio represents the pinnacle of the estate's sparkling production, crafted exclusively from hand‑harvested Chardonnay fermented at low temperatures to preserve finesse. Secondary fermentation and extended lees ageing – typically several years – build richness, fine mousse, and complexity. The winery's modern technology ensure gentle handling, while a long maturation in underground cellars maintains steady temperatures. The final cuvée reflects a balance between alpine purity and autolytic depth, offering an elegant expression of Trentodoc's potential and the house's philosophy of capturing the mountain landscape's brightness and precision within a refined, age‑worthy Metodo Classico wine.

NOTES

This rich Italian blanc de blancs shows varietal purity with its abundance of yellow and green apple aromas that mingle with lemon and lime notes and a hint of pear and apple blossom. The same flavours expand on the soft, creamy palate, along with lemon curd, yellow pear, quince, apricot and pastry. The delicate use of oak provides a backbone of richness to balance out the crisp acidity, while a persistent toasty finish adds length.
