Perissos, a family-run estate in Texas Hill Country, has emerged as a strong advocate for Mediterranean varieties that thrive in the region's warm, sun‑soaked climate. Aglianico has proven particularly suited to the granite and limestone soils surrounding the winery, producing wines with natural structure and firm acidity.
The 2022 Aglianico is sourced from estate and select local vineyards, all farmed with close attention to canopy shading to protect the fruit during intense summer heat. Winemaking focuses on controlled extraction: extended but gentle macerations to develop tannins without harshness, and cool fermentations to retain aromatic lift. Maturation in neutral and lightly toasted French oak allows the grape's savoury, mineral character to emerge.
